Radish and Shrimp Orzo Pasta with Lemon
Yet another recipe to give all of our wonderful Harvest Box customers more inspiration for rethinking the humble radish!
Adding any vegetable to a buttery, lemony pasta with shrimp and either fun little orzo pasta (that cooks quickly) or equally fun and slurpable linguine noodles is a great way to show kids of all ages that the veggies they see every day (like radishes) can be totally different and exciting.
This recipe could also be a great time to use hakurei salad turnips and their greens for the radishes, sub in garlic scapes or green garlic for the bulb garlic, and any additions like ribbons of kale or chard would be excellent thrown in as well!
Sprouted Lentil and Radish Salad with Grilled Salmon
Sprouted lentils and spring radishes are both oh so delicious and nutritious! This quick salad uses a pantry staple star to remake your weeknight side or weekday lunch into a filling and wholesome meal that also happens to highlight some gorgeous spring crops. You can also sub in any other spring vegetable from our recent harvest boxes - salad turnips, sweet carrots, and sugar snap peas would all be excellent substitutions or additions.

Like many folks, the Paulovits family was looking for new ways to use the radishes from their harvest boxes this last winter. We chatted a lot at pick-up and our first blog post of 2023 on the Purple Heart Radish with all the recipe suggestions was a popular topic. We are always looking for more ways to get folks excited about our local produce though so, when they came across this recipe and told me about it, I asked them to share.
I've taken the linked recipe and made some augments to it to be more reflective of a traditional chopped Greek salad. I also wanted to share how easy it is to make substitutions and alter recipes like this to what best suits your tastes and what you have readily available. Think of any recipe we share as quidelines rather than hard and fast rules and you'll do well!
