Certified organic Dark Northern Rye Flour. Offers a nutty earthy flavor to any baked goods, and is a key ingredient for in pumpernickel and other European breads. The protein level in this flour is approximately 8-9%.
Note that, like all Camas flours, this is a whole wheat flour (though some germ and bran are removed through the sifting process), so you'll be getting more nutrients and also notice a deeper flavor and possible differences in how it bakes.
