One 4-pound bag of certified organic sifted Pastry Flour (previously called Club Wheat Pastry Flour). This is Camas's lightest flour, and makes wonderful cookies, pie crusts, and other baked goods. It has a light and clean taste and works well as an all-purpose whole wheat flour.
Note that, like all Camas flours, this is a whole wheat flour (though some germ and bran are removed through the sifting process), so you'll be getting more nutrients and also notice a deeper flavor and possible differences in how it bakes.
