Central Oregon carrots are here and they are tender and delicious! These smaller carrots are perfect for snacking or roasting whole. Grown by the wonderful folks at Boundless Farmstead.
Storage tip: remove the greens (which are edible - carrot top pesto is a fav) and store the carrots separately. They'll hold especially well in a perforated or slightly open plastic bag or wrapped in a damp (but not wet) towel. The greens will do best with a lightly damp paper towel in a plastic bag - it just keeps them from drying out and getting wilty, and by not totally saturating the paper towel, you let it also absorb excess moisture.
Carrot greens are edible - the most popular usage is to turn them into carrot top pesto (make sure to adjust your seasonings to taste as it can turn out a bit more bitter than a standard pesto, so don't be afraid to add a smidge of honey to balance it out!) but they can also be blanched and dressed or stirred into soups and beans like other greens.
