Certified organic Sifted Hard White Wheat Flour. This is a blend of two popular Camas flours (Organic Edison Hard White Wheat and Platinum Hard White Wheat) that is designed to work as an all-purpose flour. The protein level in this flour is approximately 9-12%.

Note that, like all Camas flours, this is a whole wheat flour (though some germ and bran are removed through the sifting process), so you'll be getting more nutrients and also notice a deeper flavor and possible differences in how it bakes.

Grown and milled by Camas Country Mill in Junction City, Oregon.
