Agricultural Connections offers a wide variety of products that are sometimes tricky to fit into specific categories. One great example is locally-grown celery, which has a much more pronounced flavor profile and greener stalks than your usual celery. This vegetable is traditionally grown in shallow depressions so the plant can be buried with soil as it grows to “blanche” the stalks, or turn them white. Once celery is no longer available, celery root is an excellent substitute in stocks and recipes (see “Roots”). Also look out for green and red okra, tender fennel, and artichokes!
